4 Recipes From Pinterest You Should Try For Dinner

Welcome back, y’all!

If you follow me on Instagram, which you all should BTW, you know that I love posting food and recipes on my stories! Pretty much anytime I cook an elaborate meal, I document most, if not all of it!

Today’s blog post is a roundup of some of my favorite recipes I’ve ever cooked. Full credit goes to Pinterest for all of these, as I could never be this creative while cooking, LOL.

Chicken Pineapple Curry

One of the first recipes I tried to follow all alone in my single apartment was this Chicken Pineapple Curry one from Erin Chase, over at $5 Dinners. This was smack dead in the middle of the pandemic, when everybody was looking for an excuse to bake or cook something, LOL.

I had gotten a wok from my parents for a housewarming gift and decided this was the perfect time to use it!

The first time I made this, I had way too many vegetables and pieces of chicken. I felt like I had to add extra rice just to accompany it. If you’re a single person, I would recommend cutting her recipe in half so you have less to eat.

BBQ Pulled Chicken

This recipe I made maybe a few weeks after I made the curry one. While it might seem a bit basic, it was the first time I had ever made something like this. Usually, if my family and I wanted BBQ chicken sandwiches when I was younger, we’d just go to a restaurant and buy them. I’m especially glad I made this recipe because it contains a BBQ recipe that I have made loads of times since.

Sometimes, I don’t even bother getting BBQ sauce in the drive thru because I can make it better at home!

Risotto

Up next is this amazing risotto I made during quarantine last year. Unfortunately, I couldn’t find the exact recipe I used, but don’t worry, Pinterest is your best friend!

The one pictured above is a basic garlic parmesan risotto. I first made this in my wok, but this can be made in any large pot or even an instant pot. It’s so tasty, amazing and best of all, very easy to make quickly!

Nashville Hot Chicken Sandwich

Now, I’m usually not a sandwich person (despite the fact that I talked about another sandwich in this post, LOL), but one day a few months ago, I wanted to try making a Nashville hot chicken sandwich.

Finding the recipe was very easy, as it’s a pretty trendy food right now. Shout out to Emma and Sean over at Our Countertop! They made a perfect recipe that was easy for even me to follow.

It was kind of hard to cook the meat, but that’s because I picked the biggest chicken breasts known to man that day at Publix, haha. Make sure you get breasts on the thinner side so you won’t struggle like me.

The sauce was fun to make as well, but I wished it was a bit thicker. Again, all minor gripes.
